Philly Cheese Steak with game meat

If you like Cheese Steaks, this is excellent.
Take a package of frozen meat and put it in your refrigerator for about 4 hours, so that it is 'semi-frozen'. Slice as thin as possible on a Deli style slicer if you have one, or maybe you could get your butcher to do it for you.  You can put serving sizes in zip-locks and re-freeze it for later.
  Saute onions and peppers in a skillet and set aside, Cook meat medium heat for just a few moments, add a little salt and pepper to taste, turn it over in the pan, and put cheese on top,American or Montery Jack works well.  Let cook just a few more moments and put in long roll, top with the onions and peppers, some people add catsup.  Mmmm Mmmm.  It dont get better for an Elk sandwitch.
