What is the proper way to harvest Catnip

I have access to wild catnip and I'am considering harvesting some to sell. It's not a large commercial amounts but should be enough to sell to trappers.
Can any of you guys that use catnip tell me what is the best way to harvest it and prepare it for sale. I have it but never use it.

I always pulled the whole plant up by the roots, shook as much dirt out of the root ball as I could, then hung it to dry.
I never sold it though, just for something to drive the cat nuts during the winter.
