Bolt Field Stripping.

I own Remington M700s and Winchester M70s, all stainless. I have heard about "field stripping" the bolts and that they are easy. I was thinking about doing this in order to assess whether they need to be cleaned.
Is this a complex process or should I take it to a gunsmith to show me? Saftey (and Reliability) is my #1 concern.

I think a M700 owners manual shows how to take the firing pin/spring assembly out of the bolt, but thats as far as I've been

Nate,
How often should you do this? I know that there is no hard and fast rule, but I'm just wondering how often you disassemble it?
Thanks,
Zachary
