« on: September 29, 2004, 02:21:26 PM »
I went to Hunt n shoot ranch on sunday along with 3 buddies.  This is a bowhunting ranch only and we all managed to take good hogs  I brought home 2  but wounded one after a high shot at 15 yards  im shooting a pse bruin whisker bisquit cobra sites and tru fire release  along with carbon express wolverines with a muzzy 3 blade broadhead  i had complete pass throughs with my bow set at 55 lbs.  my first hog  was from a stand and weighed about 25 lbs after a 25 yard search  i found my pig while searching for this hog  i came across several other hogs but decided  to wait until i recover this  one  after i recovered  the young sow  i stalked  back to a feeder  and  seen a  nice 125 lb sow feeding  i crawled to within  15 yards  and  hit  her   right between  the  shoulders, after a 70 yard  chase  i  found  her.  i went  to my feeder  after a break  and  some shooting  with  my friends  i  was  at  a feeder  when about 20 hogs came in   i  shot  high  dropping  the boar in his tracks   but  he  got  up and ran off.  Andrew  my hunting buddy  shot  one  with  a 58 inch longbow  which  was awesome and  2 other friends took  2 nice hogs a piece.  we will be going back.  i have pictures  but  cannmot  post  on hunt 101.com

Its real easy- for 10 lbs of meat i use about 15-20 fresh jalipenas (depends on how hot they are) take the seeds out and dice fine. I use latex gloves to do this. Add 4 Tbs. Kosher salt, 2 Tbs. ground fresh black pepper, 2 Tbs. granulated sugar and 1 lb of shredded sharp chedder. You will love this sausage! I also buy pork fat from the butcher and mix while grinding at about 15 to 20 %.( 1 1/2 to 2 lbs in 10)- Yummy. I stuff mine in hog casings from the butcher, but it is also great in pattys. A guy i know made me some from a hog i killed, but wouldnt give me the recipe so i came up with this one and it is VERY close- works great.   Good eats- Tad  :D
