What barrel taper would you recommend for a Rem. 700 short action chambered in 7-08, or 260 rem, bedded in a Mcmillan anschutz silhouette stock?

If you are talking about a standard gun with this stock,  you can use a #5 taper  from Douglas or an equivalent taper.   I used this taper before and I always used a shower shoe for recoil pad.  Never had a weight problem. My gun weighed in about 9.5 lbs.   Don

Same question, but for hunter rifle using a McMillan sporter stock?

My two bit opinion: put all your components together and leave the barrel for last.  What you have left for weight sink into the barrel.
