i've made this with both caribou and beef. one of my all time favs.

you need only;

2 lbs ground meat
2 cans cream of mushroom soup
1 can chopped mushrooms
3/4 cup sour cream

brown meat in deep frying pan. drain excess fat and put on low heat. add soup & mushrooms and stir. add sour cream, stir, and let simmer for 5-10 minutes. serve over pasta, doesn't matter what kind. i'm getting hungry just typing it! :D

Here's another... this one has a bit of a kick.

1 lb venison hamburger or steak cut into 1/2 cubes
8 to 12 oz sliced mushrooms
1 medium onion
1 cup sour cream
1 1/2 tsp sugar
1 1/2 tsp mustard powder
1 tsp salt
1 tsp pepper
1 tbl crushed garlic
1/4 cup cooking sherry

Brown venison and set aside.

Sherry spice mix - combine dry spices into sherry to form paste.

Saute onions, mushrooms, and garlic on low-med low heat until onions are tender.  Add sherry spice mix, add browned venison.  Heat until meat is warm again.  Immediately before serving, add 1 cup sour cream and heat through.

Serve over egg-noodles.
