Elkburgers
2 pounds elk meat, ground
4 slices white bread, dried
2 wild onions, minced
1 cup milk
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
Place the elk meat in a large mixing bowl and make a well in the center of the meat. Crumble the dried white bread over the meat. Add the minced onions, milk, eggs, salt and pepper to the well. Mix thoroughly with a wooden spoon. Finish mixing with your hands until the dough is smooth and pliable. Shape the dough into patties about three inches in diameter. Place bacon fat in a heavy frying pan and heat until a haze rises over the pan, add the patties to the pan and fry on both sides until cooked.
