I have not shot my Pearson Rogue compound bow in 10 or so years.  The last time I shot I backed off the pressure and put it away.

Should I change the cables and string, and how often should I do this?

Also if there is any other infor that could help I would appreciate it.  I have recently changed jobs and can bow hunt again.

Since Im still a complete noob all I can go on is what Im told.  I have a friend who switches strings every 2 years or so NO MATTER WHAT THE CONDITION.  He says (as well as what Ive read) is that strings will stretch over time.  One guy even suggested keeping aside a special arrow that has a mark on it from when you put a fresh string on.  every now and then he will check the arrow and once there is something like a 1/2" difference  is when he changes it.
Cables, as Im led to believe, NEVER need changing (unless of course they break  :) .)
But again, this is not my experience, just what Ive read and been told.

Hopefully you have a bow shop in your area that you can trust.  Take the bow into them and see what they think.  I really do not think you will have any problems.  Wax up the string and pull it back a few times.  listen for creaks etc...bring it back up to weight and ck it.  You should know by drawing it back if it is to long in draw length.
