Spagetti question

Ok, here is the million dollar question. . . Why are you not supposed to rinse your cooked spagetti with hot water ?  If you don't it kind of sticks together.

Add a little olive oil to the water as it boils. It won't stick when you drain it.

Lots of people say no rinse.  The starch allows the sauce to cling to it.

My Italian immigrant grandparents (all 4) Never rinsed the "macaroni". To keep it from sticking they put some butter or a little sauce ("gravy" is what they called it) on it as soon as they drained it. The rest of the sauce went on at the table. I just throw it back in the pot and stir in a little olive oil.

Ah!  I never heard about getting the sauce to stick to the noodles.  I have always added olive oil to the water before putting the Spagetti in.  I also put some butter in after it is drained.  But never could figure out why a person should not rinse it off.
