How Do You Like Your Jerky?

I'm sitting here tonight while the sweet smell of Elk jerky drying in the dehydrator permeates my humble home. I normally just mix up some soy sauce and brown sugar as a marinade. How do you guys make your jerky? I've still got plenty of meat to do, and I'd like to try something new.

Hmmmm......my daughter does also. I'm thinking about adding some dried red pepper to tomorrow's batch.

Add some liquid smoke to the marinade. For extra flavor, partially dry the meat, then brush on some more marinade, it really soaks in, then finish drying. POWDERMAN.

Hmmmm......I'll go have a look at some liquid smoke. If it's not got too many artificials in it, I may just give it a try.

i am originally from Louisiana, so I loke to sprinkle some Cayenne on the meat after I marinate it and before I dry it. Try soaking it in Italian dressing for about a day, then sprinkle some Cayenne on it and dry it.
