Theres nothing wrong with 270, 280, or 30/06.  The 300 win mag is also a time proven big game caliber.  I don't really like the belted magnums in the encore but some like them.  I have a 24" 30/06 barrel for my encore and it will regularly shoot inside 2" at 200 yards with federal premium 180gr HE loads and 2-7 leupold.

No need to go bigger than 300 mag on elk or mule deer.  If you must have a magnum the 7mm or 300 will work fine.  Don't dismiss the 270, 280, or 30-06, as these have probably accounted for more elk and mulies than any belted magnum.  With today's ammo these rounds almost duplicate the magnums ballistics also.
