Rattlesnake (or any other snake)
« on: March 11, 2005, 07:19:27 PM »
Skin out the snake and gut it.

Cut the snake up in pieces of about three ribs (medium sized snake).

Soak it in lemon juice for a couple of hours.

Take the snake out and batter it up, and deep fry it in peanut oil.

Excellent with dirty rice.

ive eaten a couple of snakes but this reminds me of a funny story. when i was young i sort of accidentlly filleted a snake and put it in the family freezer. now understand i really wasnt allowed to put anything in the family freezer becuase of a recent skunk hide incident. mom got it out thinkin it was fish and breaded and fried it and fed it to my lil sis. i kind of kept quiet bout it for a few years afterwards. sis did like it tho bes i remembered. :D

I really like to use it for chili, make your favorite chili then substitute rattlesnake (snake) for the beef, Javelina etc. I sear the snake pieces in some olive oil just before Im ready to finish the chili with about 1/2 to an hour before seving, this keeps the meat together. falls apart in your mouth and adds great flavor. Man that sounds good.  I have put gator meat in chili, but for some reason, I have never thought of putting snake in.  What else you got for me R-R-RANGER, I am putting together a personal collection of wild game recipes.

stuffed quail???
open em up along the spine then use the good game shears to snip the wings at the shoulder and the pelvis
remove the spine, innards etc using the fingers to debreast along the crest, you now have a great little pocket to stuff, I also clip the legs at the knee.
then stuff with dove breast nuggets or crawdads or rattlesnake nuggets, etc
these can be roasted or grilled
javelina chili?
bear steaks& roasts
what do you have a taste for??
what kind of meat...ps gator is incredible; almost enough to miss Georgia

I always liked snake for stir fry, especially the outer chewier parts.  Goes well with stir fry vegetables and teriyaki sauce.
