Another recipe.....

GROUNDHOG STEW

1 groundhog
2 onions, sliced
1/2 cup celery, sliced
Flour
Vinegar and water
Salt and pepper
Cloves

Clean hog, remove glands, cut into serving pieces. Soak overnight in a solution of equal parts of water and vinegar with addition of one sliced onion and a little salt. Drain, wash, and wipe. Parboil 20 minutes, drain, and cover with fresh boiling water. Add one sliced onion, celery, a few cloves, and salt and pepper to taste. Cook until tender; thicken gravy with flour.

Hmmmmm, num num!!!

Ok, let's get something straight here  , these aren't my recipes, I'm just sharing....there was a thread a while back at RFC on the topic of "does anyone eat groundhogs?"......lots of folks do or have at one time or another. Some families were poor and ate everything that was killed. Some shooters really like it, others that never tried it said they never would!!! Enjoy!!! FWIW, many a hungry mountainmen trappers ate their moccasins as a last resort....boiled em up and ate em!!

Ha, here is a good Groundhog recipe.

Skin and stuff with vegies cover with bacon strips and sprinkle on spices.
Place the Ground hog on an 8x16" cedar board and cook in oven with slow heat until done. Bast often.

Remove from oven throw the Groundhog to the dogs and eat the cedar
board. Yummy ,Yummy. :-D  :)

I know the "Stallard Clan "(my kin-folk) in Abingdon ate their share of the rodent. It's just that,
" Cut this gland off, peel this vein out, boil this an hour, pour off the water, boil with fresh water, leave the window open to keep down the odor, Shew the buzzards off of the house, cook for an hour and chase with moonshine."

That is a whole lotta work for one greasy rodent!

Now that is one nasty marsupial.  I have eaten groundhog in a stew once a while back, seems to me it was all dark meat and very greasy.
