I would go with Kimber. The Kimbers seem to have a better fit and finish when compared to the Springfield. The new Kimbers also come with an external extractor which is an improvement I really like. I also believe that Kimber has better customer service if you would ever have to use them. Ive shot more Kimbers than Springfield and Ive shot against many Springfields. From what Ive seen Springfields have more reliability issues. It seems that people have different opinions than these but this is just my experience.
My dealer for the last 5 years moves a lot of 1911 style guns in most every brand including Rock Island, Para, Springfield, Kimber, STI, Colt and a few others. According to him, excluding STI, Kimbers have far less returns to the factory than any other brand he dealt. I cannot remember the exact volume of 1911 style guns he moved but they were staggering. This guy is not just a dealer but an active competition shooter who has experienced and seen all of these guns in action after they have thousands of rounds through them. He ranks production 1911s in this order: STI, Kimber, Newer Colts, Springfields and Para.
Take Care,
Scott
