Pickled peppers!?!?

Hello all,

I need to know the proper way to pickle peppers.I pickled some last year and it just didn't quite take right.I just used distilled vinegar and some salt.What is the easiest way(recipe) to pickle them the right way?

Also an easy wine recipe surely would be nice :grin:

Also maybe a lesson in canning tomatoes.It's a shame I don't know how to do this stuff.I had so many tomatoes last year that a lot of them went bad.I love stewed tomatoes so a good reipe sure would be nice.Thanks again.

My Stewed Tomato's are frozen in plastic bags.  It's easier, quicker and less messy than canning them.  Somebody here probably canned tomato's at one time or another.

What kind of wine do you want to make?  Would you rather start with fresh fruits or prepared juice?  There are wine recipes out there that start with Juice from the Supermarket, but to me that stuff isnt considered wine, although technically it is.

I can walk you through the process, but you will need certain supplies first.

I found two Pickled Pepper Recipes.  One uses Pickling Spice and the other does not.  It all depends on wheher you want them sour or a little sweet.


SWEET PICKLED PEPPERS  

Green or red bell peppers
1 qt. vinegar
2 c. sugar

Fill pint jars with sliced peppers. Heat vinegar and sugar to boiling.
Pour over peppers. Seal with canning lids. Process 10 minutes.



PICKLED BANANA PEPPERS  

Use hot or sweet (or a combination) of banana peppers.
Put 1 slit in the side of each pepper (so liquid can enter).
Pack peppers uniformly in jars.

Bring to a boil a brine made of:
1/2 tsp. turmeric
1/2 tsp. salt (use ice cream salt for crisp peppers)
1/2 c. honey
1 tsp. pickling spices
1/2 c. water

Bring to a rolling boil and pour over peppers in jar; seal. Always do 1 jar at a time so that the brine will continue boiling. If the jars do not seal within an hour or 2. Process in water bath for 10 minutes.


Also, I need to know if you are just starting out in the wine making or if you have some of the hardware that would be needed.  Either way, I can point you in the right direction.   Getting started is pretty cheap, it's when you get bit by the bug that it can get expensive.

Hi!
The first thing I'd recommend is to purchase The Ball Canning and Freezing Blue Book.  Gosh, the guidelines change every year, it's a good thing that my Grandma didn't know she was doing it all wrong!!   :?

Cold packing tomatoes is very simple.
Take clean, blemish free tomatoes, blanch for ~2 min. immediately shock in ice water.  The skins will then slip off easily, halve or quarter depending on the size.  Pack into quart canning jars (make sure no cracks or chips) pack fairly tight to 1/4" from top. Remove any air bubbles. I run the handle of a wooden spoon into the jar to release any bubbles.  Add 1 tsp. salt, if desired. No other liquid is needed.  Clean top edge of jar, place canning lid and ring, tighten.  Into canner or other suitable pot, add water to 1" above jars. Cover and process 45 min.  Start timing after water comes to boil.  Remove allow to cool, etc.

There's a simple way to pickle hot peppers.  I usually do jalapenos in pint or half pint jars.  Pick through your peppers.  Set aside the blemished ones.  Use them for making salsa or some thing.  Pack the good ones into jars.  Add a clove of garlic and a half teaspoon salt.  Leave an inch of headspace.  Heat vinegar.   Pour over peppers still leaving an inch of headspace.  Put in water bath.  Process 10 minutes from the time the water starts boiling.  Remove from bath at the end of the 10 minutes.
