From your choices, the .270Win. My own choice using your criteria .280Rem.

Remington Model 700 LSS Mtn. Rifle in 7-08.

That's completely the deal.
7mm-08 has a lower recoil and is great right out to 250yds, far fruther than you say.
The .270, much as it's a great cartridge, is more than you need by your stated requirements.

I have to vote for the .270 win.  I have this caliber in a Remington BDL Stainless/Synthetic with a Detachable.  I added a Limbsaver recoil pad to it and can shoot it all day.  This is my personal favorite caliber for deer hunting and would work well for you.  If you find that it still kicks too much after the recoil pad, you could also try the Remington Reduced Recoil ammunition.  It would shorten your effective hunting range to 200 yards, but is supposed to cut the recoil by 1/2.

I'd be inclined to cast my lot with the .270Win. of what's been listed.  I haven't yet figured out an actual need for the WSM or WSSMs.  My major concern with the 6.8 is that it's a Remington offering, and Remington is quite well known for quickly dropping cartridges that don't meet their sales projections.  I think we may be on thin ice with several of these cartridges.  Just one mans opinion.  Best wishes.

I have shot deer with the 308, 7mm-08 and 270. They are all great deer hunting rounds. As far as recoil there is not much differance between them. The thing to do is shoot each one if possible and get a feel for the round and also the short or long action of the rifle. Then you will know more in what direction you want to go. I have a thing for the 308 and 7mm-08 but I lean toward short action bolt guns. If for some reason you end up with another action type go with the good old 30-06. Shot a lot of deer with it also. I have never been able to tell the differance between any of them on deer. Another that I have used is the 280 Rem. Like it also. If I were to pick a round for you it would be 308 or 7mm-08.
