I usually use a Berkshire cable anchor in softer ground, but use re-bar stakes too.  Mine are from 18" to about 24", and have a little bend in them which seems to hold better. I havn't seen the need to double stake for coon in my conditions.
Your ground conditions would determine how long of a stake you need, but I usually use the 18 to 20" stakes "here".

I use rebar cause its cheap. Lots of times I can get it free. Cross staked 18 inch stakes will hold coyotes in most dirt. Soft mud or loose sand you might need more for coons. Grab the trap and pull on it. Thats the easiest way to tell. If your not sure do something different.
