oN THE 870 EXPESS THE CALL IT A HARDWOOD STOCK. I AM CURIOUS WHAT TYPE OF WOOD IS IT?

I don't know what they use on the 870, but most manufacturors use birch, beech, and maple, stained to look like walnut for their hardwood stocks.
Sometimes these woods look better in their natural blond color IMHO.

The 870 Express models are birch...if I'm not mistaken.
