You can fill in the blank for the type of meat you use, as it is all good.  I don't know about you folks, but we are up to our armpits in fresh tomatoes and onions this time of year, try this one for a good feed:


In a large caserole sized pot, cut the tops off of 12 or so fresh tomatoes. Quarter and place into pot, unpeeled.

Simmer for an hour with a couple of cups of water, wine or both until they start to cook down.
 
Add an onion or two, diced.  
Add 1/4 cup of Italian seasoning and 1/4 cup black pepper, (you can substitute parsley flakes for the Italian seasoning) and 1/2 cup of olive or vegetable oil. Add 1/4 cup salt.

Brown meat with salt and pepper, and garlic powder, place into crock pot on a bed of sliced onions.  Pour a strong mixture of chicken soup starter or beef broth over meat.

When the mixture starts to look like a spoonable mixture, use a slotted spoon, spoon the tomatoes onto the meat, leaving most of the juice behind, placing it on the meat as a top layer.

Cook on low 8-10 hours and serve with egg noodles or mashed potatoes.  Good eating!   JeffG :D
