Rabbit hunting in the snow.
« on: February 13, 2006, 12:53:58 PM »
Just got back from a most enjoyable rabbit hunt.  I was hunting by myself.  We just have gotten about 8" of fresh snow.  I got into the field just before sunset and setup my shooting position.  I was hunting with my savage 93 .17 with a simmons 3x9 40mm scope.  I setup no more then 25 yrds from the jeep.  I sat and waited for about 15 minutes and here comes the first rabbit,  it came out of the brush into the field about 30 yrds from my setup.  I hit it just behind and a litte below its ear, it ever moved except for some jerking.  I got my rabbit and set back up. I waited for about 30 minutes then  I noticed movement off to my right and it was another rabbit coming out into the field.  this one more like 50 yrds away. Using my Mono pod gun stick I got a good stable sight picture and I hit it just behind the eye.  Again it really ever moved. All in all I was in the field for about 45 minutes.  Pretty good for an area not known for rabbit hunting.

Don't know if anyone eats rabbit but here is how I prepare them.

marinade
3lb deboned rabbit backs and legs cut into small cubes
4tbl spoons olive oil
5 cloves garlic minced
2 tbl spoons rosemary
3 tbl spoons parmesan cheese
salt and pepper

Place rabbit  cubes in combined marinade and let marinade over night

Place rabbit on skewers {small portions} roll skewers in flour then in egg then in seasoned bread crumbs.

Heat a cast iron frying pan with oil and brown skewers in oil place browned skewers in roasting pan standing vertical and roast at 400 degrees for 40 minutes enjoy serve.
