Didn't say if you'd be handloading or not.  If not, then I'd pick a popular cartridge that I know that I could find ammo for, PA or NC.  I'd say going with the 30-06, 308, 270 isn't a bad idea and would work on ANY deer.  May be "blue collar" choices, but those have put plenty of deer (and larger game) on the ground.  Ammo companies make many options for these guys and you have a variety to choose from.   If you handload or can find  ammo easily, the 7mm-08 and 280 Rem. are added to the lest.

The armory in our hunting camp looks like this:

30.06 (4)
.270 (1)
7mm Mag (1)
30.30 (1)
.308(1)

Backup rifles are mostly in the .06 and .270 caliber, except for mine:  .338 RUM  :grin:  Just because I wanted it  :-D

BTW, we hunt in Susquehanna County, PA.
Remington 7600 - 30.06Sprg, currently topless.
Remington 700XCR - .338RUM, Burris Fullfield II 3-9x/40, Burris Dovetail rings and base mounts.

SigPro 2022 - .40S&W
Glock 26 O.D.

I have a Stevens 200 in 270 that I am very happy with, it is the Savage Acton just no accu-trigger. The Stevens is probably the best econo-gun going right now, reliable and generally good accuracy.

If the budget is there get the Savage with the accu-trigger it is worth it. For me when budget allows I'll probably swap out the trigger on my Stevens but I am in no real rush it's really good enough for a big game gun.

A good 30-06 cant be beat.It use to be called the all american gun in the
'60s and '70s.My own opinion 8)

You are never wrong with the 30-06. My favorites because they kick less and are more than enough for deer are the 260 Remington and the 308. You can get 308s everywhere, in bullet weights fron 125 to 180 grains, Very accurate and available in any action/rifle you would want. The 260 is good but harder to find and a little less versitile.
