Peel the potatoes, put them in a pot, completely cover with cold (tap), water, add chicken flavored bouillon, and boil until tender.  Remove from heat, drain the water, and add butter while hot (according to the amount of potatoes), add either sour cream, or cream cheese, salt and pepper to taste.  (go lightly with the salt until you have tasted them, the bouillon also contains salt.)  These will go well with any meal, beef, chicken, pork, or wild game,  with or without gravy.  The sour cream adds flavor but has a tendency to THIN the potatoes, the cream cheese add flavor but has a tendency to THICKEN the potatoes.

To really doctor them up, add a little garlic powder (not garlic salt), a little parsley, and crushed bacon.  Sprinkle the tops with chives, and add a little Cheddar cheese to top it off.  These go best with no gravy since they are kinda like a baked potato out of the skin.  They will compliment any meal.

This ones called "Louisiana Red Hots", although they are not too hot just spicy.

Boil some small red potatoes in Shrimp and Crab boil.  When fork tender, drain and mash leaving skins on adding garlic and butter.

This is a tremendous twist on mashed taters, particularly when served with seafood.  I like this with grilled or fried catfish.

Enjoy,

Smoky
