I have used callogen casings for italian sausage and would like to try something different. I have had some casings that are tough to chew through and did not like them. what natural casing would you recommend?

32 to 35mm hog casing.
For dry cure use 35-38mm.
"Great Sausage Recipes And Meat Curing" by Rytek Kutas is one of the best sausage making reference book out there. If you make sausage it should be on your book shelf.
