Field dressing / cooking doves

Best way to field dress doves, and recipes. Any help would be appreciated.

The last time I went dove hunting, I cleaned them as I shot them.  I don't think that's legal tho.  I only kept the breasts.  Pull the head off, stick your finger down the neck hole, hook it forward under the breast and pull it out the top.  Toss the rest in the bushes.  A buddy of mine had a little 6 pack cooler with ice and we tossed the breasts into that.

Cut the wings at the shoulder and cut the head and neck off with game shears.  Then stick your thumb under the breast and pull it free of the remaining carcass.  Clean the skin off the breast and you're done.  I like to then cut the breast meat off and put them on each side of a jalepeno, wrap them in bacon and put them on the grill.


I've also made dove hash, grilled the breasts after marinating them, and baked the breasts.

Clean them as they say and marinate in Italian dressing and grill on the grill  Another way is to wrap each in bacon, and cook on the grill till bacon is crisp, then simmer the breasts in your favorite BBQ sauce for an hour.  Finally, you can also cook them in a pan of stuffing.  Just make the stuffing up, push each breast down into the stuffing and cook in the oven.  It's all good!

Clean as above, then marinade them in teriake sauce, wrap in bacon w/ toothpick then grill over coals just a bit on the rare side.
