2 lbs. ground venison
1 med. onion chopped
minced garlic ( optional)
1 can ranch style beans
1 can hominy
1 can rotel diced tomatoes & chiles
a little oil
we cook this in dutch ovens with briquets, but can be done in
oven or stove top.
Heat do or covered pot with a little oil
add onions and garlic let cook until clear
add meat. cook until grey, stirring continually
add rotel, stir in well
now, here i throw in a handful of brown rice or barley
or both
add canned hominy, stir
add beans, stir
cover. we cook about 30 mins. in a do
in oven i guess about the same at 350
stovetop maybe simmer for an hour
variations; use any beans you like. whole kernel corn in
place of hominy.
celery, bell pepper, jalapenos, you know what you like.
